Recipe project: Waldorf salad

A friend of mine is coming to dinner tomorrow and since I ate a ton this weekend I want the meal to be light but original, so I’m opting for a classic American dish: the Waldorf salad!

The recipe is essentially from food network but with a little twist (the chicken).

As a note, the Waldorf Astoria, which is where the recipe was created is kinda special to me since when I worked in NYC (a grand total of a month and a half!) I used to pass in front of it and admire its 30’s grandeur every morning.

Ingredients for 4
2 chicken breasts, steamed with a little dill on top and cooled then cut into cubes
1/2 cup walnuts halves
1/2 cup non-fat yogurt
2 tablespoons light mayonnaise
2 tablespoons parsley
1 teaspoon honey
1/2 lemon – juice and zest
Salt & black pepper
2 gala apple cut into cubes with skin on
2 ribs celery with leaves sliced thin
1/4 cup raisins
1 Boston lettuce

Directions
-Toast the walnuts in a pan and break into small pieces once they have cooled
– Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest + salt& pepper in the salad bowl
– Add the apples, celery and raisins to the bowl and sprinkle with the lemon juice
– Add the chicken then toss with the dressing, finally add the walnuts.
– Arrange the lettuce leaves on a plate and place the salad on the lettuce
