I’ve been wanting to try and cool my own bouillon for a while but since I never eat a whole chicken I never had the raw materials on hand.
But I drank a bouillon at a Spanish hole in the wall on my way back from San Sebastián and it made me want to try it!
Here is a recipe project for it
– 5 chicken thighs( I’m going to go organic on this one)
– 1 medium onion
– 1 celery branch
– 1 carrot
– 1 laurel leaf
– salt and water
– throw all of the ingredients in a huge poor with the lead on until it boils
– boil for one hour an remove the meat
– reduce for 30 min
-let cool to skim the fat off the broth
The cool this is that you can freeze it so make a big batch.
