Melon cucumber feta salad

As mentioned i got inspired by feta after making my greek salad and made this declination i found online.

I’m bringing it to a friend’s ‘Apéro’ tonight and i suspect it’ll be a hit in this warm weather!

Ingredients (serves 6 as a starter)

  • 1 melon
  • 1 package Feta (i chose mine with Provence herbs inside)
  • 1 cucumber
  • 1 small package pine nuts(those are pricey aren’t they!?)
  • 10 mint leaves
  • EVOO/Vinegar/salt and pepper

  • Heat a frying pan and toast the pine nuts in it (5 mins, you’ll know when they’re ready when they smell!)
  • While the pine nuts are toasting, cut melon, cucumber and feta in half an inch cubes (1cm)
  • Put them in a large bowl and add the cut mint (cut it with scissors, much more simple!), add the cooled pine nuts
  • Season with oil, vinegar, salt and pepper
  • Serve chilled

And now in french!

Ingredients (serves 6 as a starter)

  • 1 melon

  • Servir frais!
