Greek salad and other feta ideas

The other day i wanted to make sthg nice for my ex-intern who was coming to have lunch (well in the end we sticked to AC’ed places so, not my place!) and i got struck by inspiration at the store: why not make a greek salad!

Only problem, i’m not so fond of onions and she doesn’t like peppers. Well i did not let that stop me!

Here were the ingredients of my salad, sufficient to feed 4 for a main meal with bread.

  • 8 small tomatoes
  • 2 cucumbers
  • 2 packages of feta
  • 1 big pack of fresh black and green olives marinated in oil (drained)
  • Oil and vinegar, salt and pepper

Directions: cut everything is large pieces (3cm long) and mix!

I also found another recipe idea i would love to try: mixing melon-, feta, cucumber, grilled pine nuts and mint- i bet it’s quite good!
