Eggplant with feta

I went to a friend’s house for dinner who claims not to be able to cook- but when he prepared the eggplant with feta dish for me i could only disagree with that statement… it was delicious!!

A simple dish, but very very tasty, you could make it with fresh or frozen eggplants.

Ingredients (for 2 as a side)

  • 4 nice slices of eggplant (if you want to make it easy you can buy the frozen pre-grilled slices ;))
  • a feta cheese sleeve
  • jar of eggplant caviar
  • garlic (crushed)
  • lemon juice
  • salt, pepper, herbes de provence and olive oil


  • Cook the eggplant slices in the oven or a steamer (which is what my friend did)
  • Arrange on the serving plate and add in that order : the garlic, the eggplant caviar, some crumbled feta, lemon juice, salt, pepper, herbs and drizzle with olive oil

It’s delicious hot or cold!
