I made this quinoa salad for my dinner tonight ( which I’ll eat at the gym after my workout and before happy hour!) but since I was having a very reasonable fish and greens salad for lunch I sprinkled a few spoons of the quinoa salad on it.
Here is the recipe, which really isn’t a recipe since it’s so simple!
Quinoa salad, Serves 2 for a main meal
- 1 pack precooked quinoa (250g)
- 2 big stalks celery
- A handful of grated carrots
- 2 tomatoes
- 4 big mushrooms
- Parsley, mint, salt & pepper, good quality Olive oil, lemon juice and vinegar
Cut tomatoes, celery and mushrooms in small cubes, and toss all together!
Quinoa is really good for you-in the ‘did you know’ food geek category: it looks like a cereal it tastes like a cereal but it really is not a cereal- it does not contain gluten! And i was surprised to learn it’s from the same family as spinach and beetroots.
It’s full f omega 3’s, protein and fiber and I read that 2013 has been declared ‘Quinoa year’ by the United Nations- LOVE it!
