Inpromptu Curry

So tonight i was out early-ish (thanks to the photoshoot!) so i felt like going out but it seems my friends had other ideas so i found myself home prematurely😉

So since i had time on my hands i tried to use up some ingredients that were not finding much use in my kitchen: tomatoes and onions. I had chicken so i started to put all of that in a pan when i realized i could add a few spices and call it a curry!

Much more appealing than ‘ leftover tomatoes and chicken dish’. I added chickpeas for the starch and there you go i had my full nutritional balance right there!

I just finished it and it is heavenly!

Here is the ‘recipe’

Ingredients for 2/3 ppl

  • 2 chicken breast cutlets
  • 1 pack cherry tomatoes or 6 tomatoes
  • 1 small can chickpeas
  • 2 onions
  • Olive oil
  • spices: salt, pepper, cayenne pepper, dried parsley flakes, cumin seeds, cumin powder, garlic powder, curry powder

Directions:

  • Cut everything up (not the spices lol!), put in pan with spices and olive oil
  • Cook in a non stick pan for 15 minutes while you catch up on today’s dishwashing (if you have a dishwasher, lucky you!)
  • Njoy!!
