Matcha cake project

So a new Kusmi store opened in town recently and i went to check it our yesterday with a friend.

It was a really nice experience as the colors of the brand are very vivd and they have those old time tea jars, and when you walk in they offer you a cup of tea 🙂

They knew how to win me over and i spent a fortune on an assortment of teas and in particular a box of ‘matcha’ powder. Now i’m not too sure of the origins of that tea except it’s from Japan but if you’ve already had it you’ll remember it. It’s vivid green and very fine and it makes the most delicious mild tea, i do love it.

I also remembered it form the US where matcha frozen yogurt was the rage when i left, so i bought a (really expensive!) tin of that precious powder with the objective to cook with it!

My first trial will be matcha green tea cake, here is the recipe:

Cake au matcha

  • 125g de farine
  • 1 cà c de levure
  • 2 cà c de matcha en poudre
  • 2 oeufs
  • 100g de sucre glace
  • 50g de poudre d’amandes
  • 100g de beurre salé


  • Préchauffer le four à 180°.
  • Mélanger la farine, la levure et le matcha dans un bol.
  • Dans un autre bol, battre les jaunes avec le sucre et la poudre d’amandes. Ajouter le beurre fondu et bien mélanger.
  • Verser dans le mélange précédent, bien battre. Dans un troisième bol, monter les blancs en neige avec une pincée de sel, et les incorporer délicatement au mélange.
  • Verser dans un moule à cake garni de papier sulfurisé. Cuire 30 à 40 minutes en surveillant à la fin de la cuisson, et jusqu’à ce que la pointe du couteau ressorte sèche. Laisser refroidir avant de démouler et de découper.

It looks promising with the almond powder and the matcha taste to balance the sweetness! And quite simple too.

The result is a slightly alien green cake, which is often paired with raspberries both for color and flavor.

As for timing i’m not so sure when i’ll make this yet because i’ve been trying to watch what i eat!! But who knows maybe for my theater fellows on tuesday 🙂
