So the other day my friend Martha asked me about soup recipes since she always eats the same soup and is growing tired of it.
So i thought about her tonight when i was making a quick florentine soup, so easy to make, tasty, filling, and full of good vitamins and fiber too! what’s not to like.
oh i also forgot the fact that since it’s all from the cupboard and freezer, you can basically do it anytime!
For two biiig bowls of this warming, thick soup you’ll need:
- 1 can of drained and rinsed white beans
- 1 can of chopped tomatoes in their juice
- a bunch a frozen spinach (to taste- i like lots of it)
- salt/ pepper/ garlic powder/ Olive oil/ ketchup (optional)/Worcestershire sauce (optional)/ cayenne pepper (optional)
Directions: dump everything in a large pot and cook until the spinach is warmed through (no need to overcook), about 10 minutes.
You can add fresh goat’s cheese on the top and a drizzle of olive oil if you feel extra fancy 🙂
