So i kept my promise and executed the cake hybrid i was talking about it this post (go there for the recipe in english AND in french!) for my friend’s housewarming party, and it was pretty easy (considering it’s a 3 elements cake!) and VERY delicious.
I have to say i probably met more people at that party thanks to my cake than to my dazzling personality!
Here are the few things i learnt while doing the recipe
- To crush the speculoos, if you are a total amateur like me and don’t have a pestle and mortar, just use an empty jam jar or wine bottle,…does the trick beautifully! (also use to even out the crust in the pie dish after the speculoos is mixed with the butter)
- For the jam, forget the saucepan! just put the whole jam jar in the microwave for about a minute 🙂
- Lastly to check that it’s cooked, just jiggle the cake (when you think it’s ready) and the center should stay relatively still (if it does like jell-O, its still needing a few minutes!)
So all in all a nice success!!
